This involves carefully inserting a scallop knife or a sturdy, thin spoon into the hinge of the shell. Twist the knife to pop the shell open. Discard the top, flat shell. With the cupped shell in hand, slide the knife along the inside of the shell, detaching the scallop meat from the shell.
