"Espresso Bourbon Steak with Mashed Sweet Potatoes Prep Time: 15 minutes Cook Time: 20 minutes Serves: 4 Course: Main Course Ingredients: For the Espresso Bourbon Steak: 2 (8oz) steaks, such as sirloin or ribeye 1 tablespoon olive oil 1 tablespoon espresso powder 1 tablespoon brown sugar 1 teaspoon smoked paprika 1 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon black pepper 2 tablespoons bourbon For the Mashed Sweet Potatoes: 2 large sweet potatoes, peeled and cubed 1/4 cup milk 2 tablespoons butter 1/4 teaspoon salt 1/8 teaspoon black pepper Instructions: For the Espresso Bourbon Steak: In a small bowl, combine the espresso powder, brown sugar, smoked paprika, garlic powder, salt, and pepper. Rub the mixture evenly over both sides of the steaks. Heat the olive oil in a grill pan or skillet over medium-high heat. Add the steaks and cook for 4-5 minutes per side for medium-rare or until desired doneness. Remove the steaks from the pan and set aside to rest for 5 minutes. In the same pan, add the bourbon and cook for 1 minute, scraping up any browned bits from the bottom of the pan. Pour the bourbon sauce over the steaks. For the Mashed Sweet Potatoes: Place the sweet potatoes in a saucepan and cover with water. Bring to a boil and cook until tender, about 10-12 minutes. Drain the sweet potatoes and return them to the saucepan. Add the milk, butter, salt, and pepper. Mash until smooth and creamy. Serve the steaks with the mashed sweet potatoes. Enjoy!"
