The Cornbread Trick That Makes a Cast-Iron Skillet Earn Its Keep

Good cornbread should have a crisp, bronzed edge and a tender middle—not a dry yellow brick. The secret is simple: heat the skillet before the batter ever sees it.

Buy stone-ground yellow cornmeal if you can find it, but don’t turn this into a pantry scavenger hunt. The regular bag from the grocery store will make fine cornbread. You’ll need 1½ cups cornmeal, ½ cup all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, 1 cup buttermilk, 2 eggs, and 4 tablespoons melted butter. Keep a little bacon grease or neutral oil nearby for the skillet. I prefer bacon grease, because life is short and cornbread deserves a good story.

Put a 10-inch cast-iron skillet in the oven and heat it to 425 degrees. Yes, the empty pan goes in first. This is not a decorative preheating ritual. It is the whole point.

While the oven heats, whisk the cornmeal, flour, baking powder, and salt in a bowl. In another bowl, whisk the buttermilk, eggs, and melted butter. Pour the wet into the dry and stir just until no dry patches remain. The batter should be thick and pourable, like pancake batter that has spent the afternoon thinking about its choices. Don’t beat it smooth. A few tiny lumps are harmless; overmixing makes a tight, stubborn crumb.

Carefully pull out the hot skillet—it is now a small, extremely confident volcano—and add a tablespoon of bacon grease or oil. Swirl it around. Pour in the batter. It should hiss at the edges. That sound is good news: the crust has already begun.

Here’s what happens if you skip the hot-pan step: the cornbread bakes, technically, but the bottom turns pale and soft, and the sides cling to the skillet like they’ve signed a lease. You’ll still eat it, but you’ll resent it.

Bake for 18 to 22 minutes, until the top is golden and a toothpick comes out with a few moist crumbs. The edges should be deeply browned and slightly pulled away from the pan. Let it sit for five minutes, then slice it into wedges. The first bite should crackle at the rim, give way to a tender, faintly sweet center, and smell warmly of toasted corn and butter.

Serve it with beans, chili, greens, or a fried egg. And keep the cast iron: wipe it clean while it’s still warm, dry it over low heat, and rub on the thinnest sheen of oil. Never soak it. Cast iron is not needy; it simply refuses to be mistreated.
