Salmonella Outbreak Linked to Eggs Sickens Nearly 100 Individuals

Federal health agencies are investigating a multi-state outbreak of *Salmonella* infections connected to eggs. The outbreak has sickened nearly 100 individuals across various states, prompting public health officials to issue warnings regarding safe food handling practices.

*Salmonella* bacteria can cause a range of symptoms in infected individuals. People who consume contaminated food may experience fever, diarrhea, nausea, vomiting, and abdominal cramps. These symptoms typically develop between 12 and 72 hours after exposure to the bacteria.

While most individuals recover from *Salmonella* infection within four to seven days without specific treatment, some cases can be more severe. Young children, older adults, and people with compromised immune systems face a higher risk of developing serious complications. In these vulnerable populations, the infection can spread from the intestines to the bloodstream and other parts of the body, potentially requiring hospitalization.

To minimize the risk of *Salmonella* infection from eggs, health authorities recommend several safety measures. Consumers should cook eggs thoroughly until both the yolk and white are firm. Avoid consuming raw or undercooked eggs. Washing hands with soap and water before and after handling eggs is also crucial. Additionally, consumers should refrigerate eggs promptly after purchase and avoid cross-contamination by keeping raw eggs separate from other foods, utensils, and surfaces.
