Elizabeth Day, 92, Austin Hospital Administrator
Elizabeth M. Day, who worked in administration at St. Olaf Hospital in Austin for decades before retiring to Northfield, died May 20 at Northfield Retirement Community. She was 92.
Day was born Oct. 13, 1933, in Frost to Edwin and Mabel Amundson. She graduated from Albert Lea High School and attended Waldorf College in Forest City, Iowa. She married Earl Day in Austin, where they lived until moving to Northfield in 2018 to be near family. The couple spent winters in Apache Junction, Arizona, traveling by trailer.
An active member of Grace Lutheran Church in Austin, Day participated in women's groups and quilting circles throughout her life.
Day is survived by son Loren Day and his wife Deborah of Northfield; grandson Michael Day and his wife Crystal of Seattle; granddaughter Laura Simonson and her husband Sean of Northfield; great-granddaughters Maren and Madison Simonson; son-in-law Ron Smith of Ammon, Idaho; and sister-in-law Phyllis Day of Springfield, Missouri.
She was preceded in death by her husband of 66 years, Earl Day; her parents; daughter Cheryl Smith; brother Robert Amundson; sister Jean; and sister-in-law Helen Amundson.
The family thanked staff at Northfield Retirement Community's Evergreen Lodge and Minnesota Hospice. Day will be buried at Oakwood Cemetery next to her husband. Bierman, Benson, and Langehough Funeral Home handled arrangements.
