Espresso Bourbon Steak with Mashed Sweet Potatoes
Prep Time: 15 minutes
Cook Time: 20 minutes
Serves: 4
Ingredients:
Steak:
2 lbs steak (Ribeye, NY Strip, or Sirloin)
2 tbsp olive oil
1 tbsp espresso powder
1 tbsp brown sugar
1 tbsp bourbon
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
Mashed Sweet Potatoes:
2 large sweet potatoes, peeled and cubed
1/4 cup milk
2 tbsp butter
1/4 tsp salt
1/4 tsp black pepper
Instructions:
Steak:
In a small bowl, whisk together olive oil, espresso powder, brown sugar, bourbon, smoked paprika, garlic powder, salt, and pepper.
Rub the mixture all over the steak.
Let the steak sit for at least 15 minutes, or up to 2 hours in the refrigerator.
Preheat grill to medium-high heat.
Grill the steak for 4-5 minutes per side for medium-rare, or longer for your desired level of doneness.
Let the steak rest for 5-10 minutes before slicing and serving.
Mashed Sweet Potatoes:
Place sweet potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 10-15 minutes.
Drain the sweet potatoes and return them to the pot.
Add milk, butter, salt, and pepper.
Mash until smooth and creamy.
Serve the steak with mashed sweet potatoes.
